Marinara Sauce


2 cans (28 oz. each) whole tomatoes
1 onion finely chopped
2 carrots, peeled and finely chopped
1 clove garlic, chopped
2 Tbs. vegetable oil
1 1/2 tsp. sugar
1 1/2 tsp. salt


Place tomatoes in batches in blender container; blend until smooth.
In skillet, saute onion, carrot and garlic in oil just until tender (do not brown). Combine all ingredients in Crock-Pot; stir well. Cover and cook on low for 6-10 hours. Remove cover, stir well and cook on high for last hour for a thicker sauce. Makes about 6 cups.
