Hungarian Goulash


2 lbs. stew beef
1/4 lb. pork fat
1 lb. onions, chopped fine
2 Tbs. paprika
1 1/2 lb. potatoes


Cut up meat in rather large cubes. Melt fat in large pot and saute onions. Salt the meat and add, letting it fry until fat is absorbed. Sprinkle generously with paprika. Pour on water to cover, cover and stew 1 1/2 hours. Peel potatoes, cut in thin wedges , add to stew, cook 1/2 hour longer or until meat is tender. Add more water if necessary.
