Harvard Beets


1/3 c. sugar
1/2 tsp. salt
1/2 c. vinegar
1 Tbs. corn starch
2 Tbs. butter
3 c. hot sliced or cubed cooked beets
1 tsp. minced onion


In double boiler, blend sugar, salt, cornstarch and vinegar; cook, stirring constantly, until smooth and thickened. Add butter, onion and beets; heat 20 minutes.
