Carrot Parsnip Stir-Fry


1 1/2 lbs. parsnips, peeled and julienned
1/4 c. butter
2 lbs. carrots, julienned
2 Tbs diced minced onion


In a large skillet, saute the parsnips in butter for 3-4 minutes. Add the carrots and onion; cook and stir until vegetables are tender, about 10-15 minutes.
