Upside-down Pear Cake
Ingredients:
1/4 c. shortening
14 oz. canned pear halves
1/2 c brown sugar
1 egg
1/2 c. milk
1 c. flour
2 tsp. baking powder
Pinch of salt

Directions:
Preheat oven to 375 degrees. Butter an 8" round deep cake pan. Set aside. In a saucepan, melt shortening. Spread over bottom of pan . Line with pear halves. Add brown sugar. Beat egg and milk. Sift in flour, baking powder and salt. Pour into pan over pear halves. Bake in oven 1 hour or until it tests done. Immediately turn out onto plate. Garnish with your choice of fruit.
