Caramel Sauce


4 Tbs. sugar
1 Tbs. water
2 c. milk
1 Tbs. cornstarch
1 egg, separated
1/2 tsp. vanilla


Brown sugar lightly in a skillet. Add water and milk and bring to a boil. Dissolve cornstarch in water, add and cook 3 minutes. Thicken this mixture with egg yolk, flavor with vanilla and let cool. Just before serving fold in beaten egg white.
