Zucchini Relish


4 - 4 1/2 lbs. zucchini
1 sweet red pepper
2 med. onions
2 Tbs. salt
2 c. sugar
1 c. vinegar
1 c. water
2 tsp. celery seed
1 tsp. nutmeg
1 tsp. turmeric
1/8 tsp. pepper


Cut up vegetables and grind in food chopper or processor. Add salt; cover and refrigerate overnight. Rinse with cold water and drain. Ladle into hot, clean pint jars and leave about 1/2" space at top. Process.
