Zucchini Bread
Ingredients:
1 c. veg. oil
2 c. sugar
3 eggs
2 c. shredded zucchini
3 c. flour
3 tsp. cinnamon
1 tsp. baking powder

Directions:
Blend oil and sugar. Beat in eggs, 1 at a time. Add zucchini and dry ingredients. Beat thoroughly. Pour into 2 greased and floured 8 1/2" x 4 1/2" pans. Bake at 325 for 1 hour or until done.
