Veal Cordon Blue


1 lb. round of veal, cut in medallions and pounded thin
1 oz Swiss cheese
1/2 oz. smoked ham
6 oz. quartered mushrooms
1/4 oz diced green onions


Coat veal medallions in flour.Saute in butter until golden brown. Place on oven tempered dish. Place ham on veal, then cheese, and brown cheese in 450 degree oven for 10 minutes. Saute mushrooms with onions and place around veal.
