Roasted Corn


2 c. corn freshly cut from the cob
1 Tbs. brown sugar
1 tsp. cinnamon
1/8 tsp. Kosher salt
1/8 tsp. black pepper


Slice corn from the cob in a small baking pan. Set corn aside. In a small bowl, combine brown sugar, salt and pepper and stir to blend. Sprinkle the sugar mixture over corn and toss to mix.
Roast at 350 for 10 to 15 minutes. The corn may be served warm from the oven or pureed in a food processor to accompany other vegetables. Makes 2 cups.
