Poached Fish


1 medium onion, sliced
3 slices lemon
3 sprigs parsley
1 bay leaf
1 tsp. salt
2 peppercorns
1 lb. fish fillets


Heat 1 1/2" of water, the onion, lemon, parsley, bay leaf, salt and peppercorns to boiling in 10" skillet; reduce heat. Arrange fish in single layer in skillet. Simmer uncovered until fish flakes easily with fork, 4 to 6 minutes.

Makes 5-6 Servings
