Broiled Fish


2 lbs. fresh fish
2 Tbs. butter melted
1 tsp. salt
Dash pepper


Arrange fish in a single layer on greased, unheated rack in a broiler pan. Brush half the melted butter over the fish. Season with salt and pepper. Place fish 4" from the heat. Broil for 5 to 8 minutes; turn thick pieces. Brush fish with the remaining melted butter. Broil 5 to 8 minutes more. Fish is done when it flakes easily when tested with a fork.
