Pineapple Cake


1/2 c. butter
1 1/2 c. sugar
2 egg yolks, beaten
1 c. crushed pineapple (with juice)
1 tsp. vanilla
1/2 tsp. salt
2 1/2 c. flour
3 1/2 tsp. baking powder
1/3 c. water
2 egg whites, whipped


Cream butter and sugar. Beat in egg yolks, pineapple, vanilla and salt. Blend in flour and baking powder. Add water. Fold in egg whites. Pour into two 9" greased layer pans or a 9x13" pan. Bake at 350 for 30 to 40 minutes. Cool and frost with pineapple frosting.

To 3 c. 10x sugar, add crushed pineapple, a little juice and food coloring.
