Zucchini Cake
Ingredients:
3 c. raw grated zucchini
3 c. sugar
3 eggs
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp/ salt
1 1/2 c. oil
3 c. flour
2 tsp. baling powder
1/2 tsp. vanilla
1 c. chopped nuts
1 1/2 tsp. orange rind (opt.)
3 c. raw grated zucchini
3 c. sugar
3 eggs
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp/ salt
1 1/2 c. oil
3 c. flour
2 tsp. baling powder
1/2 tsp. vanilla
1 c. chopped nuts
1 1/2 tsp. orange rind (opt.)
Directions:
Mix zucchini, eggs and sugar. Add other ingredients except nuts. Mix well and add nuts. Bake in tube pan (greased and floured) for 1 1/2 hours at 300 or until cake tests done. Cool before removing from rack.
Cream Cheese Frosting
8 oz. cream cheese
4 Tbs. butter
1/2 tsp. vanilla
3 c. sifted 10x sugar
Cream ingredients together, adding sugar gradually.
This is one fantastic cake.
Mix zucchini, eggs and sugar. Add other ingredients except nuts. Mix well and add nuts. Bake in tube pan (greased and floured) for 1 1/2 hours at 300 or until cake tests done. Cool before removing from rack.
