French Peas


6 strips bacon
1 med. onion
1 15oz. can peas, drained or 2 c. fresh shell peas
Parsley flakes


In cast iron frying pan, fry bacon until medium cooked (not crisp). Remove bacon and set aside to drain. Cut in small pieces. Chop onion and saute, until soft, in bacon drippings. Spoon off excess drippings. Add the drained peas, bacon pieces and some parsley flakes to frying pan. Mix and let heat up for about 10 minutes until peas are ready to serve.
