Deviled Eggs


6 hard-cooked eggs
1/4 c. mayonnaise
2 Tbs. sweet pickle relish
2 tsp. prepared mustard
1/4 tsp. salt
1 /8 tsp. pepper
12 pimiento-stuffed olives
Fresh parsley sprigs


Peel eggs; slice in half lengthwise and carefully remove yolks. Mash yolks and add mayonnaise; stir well. Add relish, mustard, salt and pepper; stir well. Spoon yolk mixture into a decorating bag fitted with a large star tip. Pipe yolk mixture into egg whites. Sprinkle lightly with Paprika. Top each with an olive slice and a sprig of parsley.
