Breaded Eggplant Slices


1 medium eggplant
1/2 c. bread crumbs
1/4 c. grated Parmesan cheese
1 bottle (8 oz.) fat-free Italian salad dressing


Cut eggplant into 1/2" slices. In a shallow bowl, combine bread crumbs and cheese. Place salad dressing in another bowl. Dip eggplant into dressing, then coat with crumb mixture. Arrange in a single layer on baking sheets covered with nonstick cooking spray. Bake at 450 for 12-15 minutes or until golden brown, turning once.
