Apricot Sauce


1 lb. dried apricots
2 1/2 c. water
1 Tbs. cornstarch
2 c. boiling water
1/2 c. sugar
1/2 c. crushed pineapple


Soak apricots in 2 1/2 c. water for 1 hour. Cook until tender and rub them through a fine sieve. Add sugar and 2 c. boiling water to pulp and bring to a boil. Mix cornstarch with 1/4 c. water to make a smooth paste. Add paste to apricot puip and cook until thickened, stirring constantly.
Remove from heat and add crushed pineapple.
