Zucchini and Mushrooms


1/4 c. butter
1 can(4 oz.) sliced mushrooms, drained
1 lb. zucchini, cut in 1/4" diagonal slices
1 Tbs. cornstarch
1/2 c. chicken broth
1 Tbs. soy sauce
1/2 tsp. salt


Melt butter in skillet, add mushrooms and cook, stirring, 1 minute. Add zucchini and cook, stirring 2 minutes. Mix cornstarch with a little chicken broth. Add remaining broth and last 2 ingredients to zucchini and bring to a boil. Cover and simmer 2 to 3 minutes, or until zucchini is cooked but still crisp. Add cornstarch mixture and cook, stirring, until thickened.

Makes 4-6 Servings
