Stuffed Zucchini
Ingredients:
1 lb. ground beef
1 large onion, chopped
Garlic salt
Pepper
1 egg
1/2 c. bread crumbs
1/2 c Parmesan cheese

1/2 c Parmesan cheese
Directions:
Par-boil 2 mediem or large zucchini for 8 minutes. Slice off top length-wise. Scoop out zucchini. Chop top slice and insides and save for filling.
Brown the beef and onion; add garlic salt and pepper. Stir in the egg, bread crumbs, cheese and chopped zucchini. Fill zucchini shells. Layer Mozzarella strips on top. Bake for 30 minutes at 350.
