Southern Style Bacon Potatoes


1/4 pound Bacon finely sliced
8 medium-sized potatoes
1 medium onion, minced
salt and pepper


1. Wash and peel potatoes and cook whole until tender in well-salted water. Drain through a colander as soon as done and return to empty pot.
2. Place over low heat and shake pot back and forth gently several times until potatoes are thoroughly dry and mealy. Cool potatoes and slice.
3. Fry bacon slowly with minced onion. When both are golden brown, add potato slices to pan and fry slowly until lightly browned. Season with salt and pepper and serve.
