Sour Cream Cake


1 c. sour cream
1 c. sugar
3 eggs
2 c. cake flour
1/2 tsp. salt
1 tsp. baking soda
Grated rind of 1 lemon
1 tsp. lemon juice


Combine sugar, egg yolks, lemon juice and rind and sour cream.
Beat until well blended.
Sift flour; measure and add salt and soda. Sift again.
Add sifted dry ingredients gradually and beat thoroughly.
Fold in stiffly beaten egg whites.
Pour into greased loaf pan.
Bake at 350 for 45 to 50 minutes.
Makes a 4x8x4\" loaf.
Cool and frost as desired.
