Scottish Shortbread


1 c. butter
1 1/2 c. flour
1/2 c. cornstarch
5-6 Tbs. 10x sugar
3 Tbs. rice flour


Beat butter until very creamy. Add flour and work in well. Add remaining ingredients. Mix. Roll on board to 1 1/2 thickness. Cut into squares and bake at 275 until faintly golden brown. Watch closely.
