Rib Eye Roast


Freshly gound pepper
Garlic powder
1 8-12 lb. boneless rib eye roast, room temperature


Preheat oven to 500 degrees. Rub generous amounts of pepper and garlic powder onto roast. Set roast on rack in baking pan. Pour enough water to come 1/2" up sides of pan. Roast meat 5 minutes per pound. Turn off heat; do not open oven. Let meat stand in oven 2 hours. Cut into slices and serve.
