Potato Filling


1/4 c. butter
1/4 c. chopped onion
1/2 c. chopped celery
4 c. stale bread cubes
Pinch of saffron, crushed (opt.)
1/4 tsp. pepper
1 Tbs. parsley
1 tsp. salt
2 c. mashed potatoes
2 eggs, slightly beaten


Combine butter, onion, celery and seasonings in sauce pan and cook until butter is browned and vegetables are tender. Add bread cubes and mix well. Using your favorite recipe for mashed potatoes, add 2 cups to filling mixture. Add enough milk to make a moist mixture. Place in casserole dish, dotting with butter. Bake at 350 until browned and puffy.
