Oyster Pie


1 doz. oysters
2 lg. potatoes, diced
1/2 c. celery, chopped
1/4 c. parsley
1 c. bread crumbs
2 hard boiled eggs
1 tsp. salt
Lots of butter


Cook potatoes and celery until soft. Add oysters and juice. Drain juice off and reserve. Add parsley, eggs, pepper, salt, bread crumbs and lots of butter. Put into casserole. Cover with a rich crust and bake at 400 until golden brown.Use leftover broth for dressing or mix with milk and butter, salt and pepper for a rich dressing.
