Apple Molasses Pie


Pastry for 2-crust pie
3/4 c. light molasses
1/4 c. sugar
1 Tbs. lemon juice
1/2 tsp. salt
6 c. sliced apples
1/4 c. melted butter
1/4 c. flour


Combine molasses, water, lemon juice and salt and bring to a boil. Add apples, cook until tender and remove from syrup. Blend butter and flour and add to hot syrup gradually, stirring constantly. Cook until thick and smooth. Fold apples lightly into syrup. Cool slightly. Turn into pastry-lined 9" pie pan, top with pastry lattice. Bake in hot oven (425) 30 minutes.
