Kiwi Sponge Cake Squares


5 eggs
2/3 c. sugar
1/4 c. honey
3/4 c. flour
3/4 tsp. baking powder
10 to 12 kiwi fruit, pared and cut up
1/2 c. sugar
4 Tbs. cornstarch
Whipped cream (opt.)


Beat eggs, gradually adding sugar and then honey. Beat until thick (about 10 minutes).

Sift flour and baking powder into egg mixture; beat until smooth. Pour into 18xz12x3/4" greased and floured jelly roll pan. Bake at 350 fot 12 nto 15 minutes. Cool.

Puree 4 kiwi fruit in blender; combine with sugar and cornstarch in saucepan. Cook and stir until thickened. Cool.

Arrange 6 to 8 sliced kiwi fruit on top of cooled cake; spread pureed mixture over top of slices to coat fruit. Cut into 3" squares.
Serve w3ith whipped cream. Makes 24 servings.
