Italian Lamb Casserole


2-1/4 lbs. boned leg lamb, trimmed and cut into 1-1/2 inch cubes
1/3 cup plus 3 Tbsps. plain flour
1 Tbsp. plus 1 tsp. olive oil
1 oz. unsalted butter
4 sticks celery, sliced diagonally
2 onions\cooked, sliced
2 carrots\cooked, sliced diagonally
2 cloves garlic, crushed
1 lb. can crushed tomatoes, undrained
2 Tbsps. plus 2 tsps. tomato paste
1 cup dry white wine
1 cup chicken stock
3/4 tsp. ground oregano
3/4 tsp. ground thyme
1/2 tsp. ground rosemary
1/4 tsp. freshly ground black pepper


Preheat oven to temperature 375F. Dust meat lightly with flour, shaking off excess. Heat oil and butter in a heavy nonstick pan over medium high heat. Cook meat 2-3 minutes, in small batches if necessary, stirring until well browned. Transfer meat to a casserole dish. Add next 4 ingredients to pan. Cook 3-4 minutes, stirring until onions are soft. Add remaining ingredients. Bring to a boil, scraping surface of pan. Pour mixture over lamb. Cover and bake 1 hour, or until lamb is tender.
