Honey Ham Omelet


3 Tbs. butter
1/4 c. onion, diced
1/2 c. ham
5 eggs
1 medium potato cut in 1" slices
1/4 c. diced green peppers
2 Tbs. honey
4-5 slices American cheese


Melt butter in frying pan over medium heat.Add sliced potatoes. Fry until golden brown.Add onions and peppers. When they are soft, add ham and fry for several minutes. Reduce heat and add honey and eggs. Cook eggs thoroughly, stirring frequently.When they are cooked, top with cheese. Serve on toasted potato rolls or bread.
