French Onion Soup


5 lb. onions, sliced
2 oz. butter
1 qt. chicken stock
1 qt. beef stock


Saute onions in butter until very brown. Put in soup pot; add stock; bring to a boil; skim scum and reduce heat to a slow simmer. Simmer for 1 hour. Makes 2 1/2 qts.
