Creamy Carrot Soup


3 c. chopped carrots
3 Tbs chopped onion.
2 Tbs. margarine
3 chicken bouillon cubes
6 oz. Velveeta cheese
4 c. milk
1 c. water (reserved from cooked carrots)


Cook carrots and drain water, saving 1 c.liquid. Blend carrots until pureed. Saute onions in margarine. Stir in until smooth the chicken cubes and reserved water. Add milk, pureed carrots and cheese. Heat just till boiling.
