Cauliflower Soup
Ingredients:
1 small cauliflower, broken into florets
1 onion, sliced
3 medium potatoes. peeled and sliced
1 chicken stock cube
2 c. water
Grated srtrong Cheddar cheese, to sprinkle

Directions:
In a pan, combine cauliflower, onion, potatoes, stock cube and water. Bring to a boil and simmer until vegetables are very tender, about 30 minutes. Blend until smooth or mash well and push through a sieve.
To serve, reheat and spoon into soup bowls. Sprinkle with cheese.
