Buttermilk Corn Bread

Ingredients:

2 c. flour
2 c. corn meal
2 Tbs. baking powder
2 tsp. salt
1 tsp. baking soda
3 Tbs. sugar
2 eggs
3 c. buttermilk
1/2 c. butter, melted and cooled slightly

Directions:

Preheat oven to 425 degrees.
Spray 2 (8" square) baking pans with nonstick cooking spray.
In mixing bowl, combine flour, corn meal, baking powder, salt, baking soda and sugar.
Separately beat eggs with buttermilk and melted butter. Pour wet ingredients into dry ingredients and gently stir together. Don't over mix. Bake until done.
