Breaded Fried Lamb


4 lbs. lamb, shoulder or leg
salt to taste
1 c. flour
2 eggs, slightly beaten
1 c. bread crumbs
1 1/2 c. fat


Cut meat into small cutlets, sprinkle with salt. Dip in flour, then in eggs Roll in bread crumbs. Fry in deep fat. Place on absorbent paper to drain.

Makes 8 Servings
