Baked Orange Roughy
Ingredients:
1 1/2 lb. orange roughy fillets
2 egg whites
3/4 c. mayonnaise
1 tsp. curry powder
1 1/2 lb. orange roughy fillets

Directions:
Place fillets in a lightly greased 13x9x2" baking dish, and set aside. Beat egg whites at high speed until stiff peaks form. Gently fold in mayonnaise and curry powder; spread mixture evenly over fillets. Bake at 350 for 25 to 30 minutes ur until fish flakes easily when tested with a fork. serve immediately.
