Weiner Schnitzel


2 lb. veal steak
1 egg, beaten
Bread crumbs
Lemon juice


Veal should be about 1/2" thick and cut into serving size pieces.Pound meat until thin. Season with salt and pepper. Dip pieces in milk, then in bread crumbs, then in egg, then back in bread crumbs. Let stand awhile in the refrigerator before cooking. Brown on both sides. Sprinkle with lemon juice.

It is excellent with a slice of swiss cheese melted on top and when served cover with browned onions.
