Swiss Steak


2 lb. round steak 1" thick
3 Tbs. melted shortening
1 1/2 tsp. salt
1 onion, minced
1/4 tsp. pepper
1/2 c. flour
3 c. tomatoes or tomato juice


Rub salt and pepper into steak and dredge with flour. Brown quickly on both sides in hot shortening with the onions. Add tomatoes, cover tightly and bake at 350 for 1 1/2 hours.
