Stuffed Rolled Rib Roast


4 oz. thinly sliced, fully cooked ham, chopped (1 cup)
3 slices bacon, snipped
1/4 c. chopped onion
2 Tbs. chopped pimiento-stuffed green olives
1 clove garlic, minced
1 beaten egg
1 4-5 lb. boneless beef rib roast


In bowl combine ham, snipped bacon,onion, olives, garlic, and beaten egg. unroll roast; spread ham mixture over meat. Reroll roast; tie securely.
Place roast, fat side up, on rack in shallow roasting pan. Roast, uncovered, at 325 about 3 hours for rare. Let stand about 15 minutes. Remove strings and carve.
