Sour Cream-Chicken Casserole


1/4 c. diced onion
1/4 c. diced celery
2 Tbs. butter
1/2 c. sour cream
1 can cream of celery soup
2 c. long grain rice, steamed
1 c. chicken
1/4 c. toasted almonds, optional


Saute onions and celery in butter until tender. Mix sour cream and soup until smooth. Layer rice, chicken, vegetables and soup mixture. Sprinkle with toasted almonds. Bake at 325 for 20 minutes.

Makes 6-7 Servings
