Roasted Leg of Lamb


1 (10 lb.) leg of lamb
1 c. olive oil
3 sprigs fresh rosemary
3 sprigs fresh oregano
8 cloves fresh garlic
Sea salt and freshly ground black pepper to taste


Clean leg well. Make 8 incissions around the leg and insert the cloves of garlic. Blend olive oil with fresh herbs and coat lamb liberally. Add salt and pepper. Bake at 350 for 80 to 90 minutes.
