Prosciutto Pockets
Ingredients:
1 (15 oz.) container ricotta cheese
1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry
4 oz. thinly sliced prosciutto, chopped
2 large egg yolks
3/4 tsp. salt
1/2 tsp. black pepper
48 wonton wrappers, cut an edge off to form a square
1 (15 oz.) container ricotta cheese
1 (10 oz.) pkg. frozen spinach, thawed and squeezed dry
4 oz. thinly sliced prosciutto, chopped

3/4 tsp. salt
1/2 tsp. black pepper
48 wonton wrappers, cut an edge off to form a square
Directions:
Whisk the ricotta, spinach, prosciutto, egg yolks, salt, and pepper in a medium bowl to blend.
Place some of the filling in the center of a wonton wrap. Brush edges with water lightly. Fold the wrapper in half to form a triangle and firmly press the edges to seal.
Deep fry a few at a time until lightly browned.
