Potato Soup


3 c. sliced potatoes
1 carrot, sliced
1/2 c. diced celery
1 medium onion, chopped
2 tsp. salt
2 c. milk
1 Tbs. butter (opt.)
Dash of pepper
Chopped parsley


Put first 5 ingredients in kettle with 1 1/2 c. water, bring to boil, cover and simmer 15 minutes, or until vegetables are tender. Mash vegetables slightly into liquid. Add milk, and butter if used,and heat. Add pepper and parsley.

Makes 4 Servings
