Potato Salad


Cooked potatoes
Onion, chopped
Celery, chopped
Celery seed, optional
Salt to taste
Hard-cooked eggs


This was my aunt made potato salad and is my favorite potato salad. Ther are no exact measurements so you can make any quanity you want. Peel and cook potatoes in salt water until tender; cool. Cut potatoes in small cubes. Finely chop onion and celery; about 1 c. each per 1 lb. potatoes. For better flavor use cooking onions. Finely chop egg into mix; I use 6 eggs per pound of potatoes. Mix some vinegar with some mayonnaise and add to mix. Taste and add additional vinegar to taste. Add additional mayonnaise to get desired consistency. Add salt to taste. Add celery seed if desired. This recipe is best made a day ahead of party.
