Potato Pudding


10 lg. potatoes (use old , not new potatoes)
1 med. onion
5 slices salt pork
2 Tbs. cream of wheat
1/4 tsp. pepper
1/2 tsp. salt
1/2 c. hot milk
3 eggs


Peel and grate fine the potatoes and onion. Mince salt pork, fry till crisp. Pour fat and pork over potatoes. add hot milk. Add beaten eggs, one at a time, salt, pepper and cream of wheat. Pour into greased pan (depth of potato mixture should be 2 to2 1/2 ") Bake at 400 fot 15 minutes. Reduce heat to 375. Bake 45 minutes longer.Serve hot with sour cream - as main course or side dish. Delicious!
