Parsnip Fritters


3 c. cooked parsnips
3 eggs
1 tsp. salt
1 Tbs. flour
1 Tbs. sugar
3 Tbs. butter
1 c. milk


Mash cooked parsnips and add beaten eggs, flour salt sugar and milk. Melt butter in a frying pan and drop mixture by spoonfuls into hot fat. Brown both sides.

Makes 6 Servings
