Pan-Fried Eggplant


1 eggplant, peeled and sliced (about 1/2" thick)
2 eggs, slightly beaten
Seasoned bread crumbs
oil cor frying


Combine eggs and 2 Tbs. water. Dip eggplant in egg mixture, then in bread crumbs.Cook eggplant in hot oil till tender and golden, 2-3 minutes per side. Salt lightly. Drain on paper towels.
