Mushroom and Potatoes


1 lb. (3 med.) potatoes
1/4 lb. mushrooms, coarsley chopped
2 shallots, minced
1 tsp. chopped chives
Cracked pepper to taste
2 Tbs. butter
1 tsp. vinegar
Chopped parsley
1 egg yolk


Barely cook potatoes in small amount of water. Peel and cut in thick slices. In saucepan, melt butter and add hot, sliced potatoes, mushrooms, shallots, chives and pepper. Add 1/3 cup water, cover and steam for a few minutes. Uncover and cook slowly to reduce liquid. Beat together egg yolk and vinegar. Remove saucepan from heat and stir in egg mixture. sprinkle with parsley.
