Mushroom-Spinach Toss


2 Tbs. wine vinegar
3/4 tsp. salt
1 small clove garlic, crushed
Generous dash of freshly ground pepper
8 oz. sliced mushrooms
16 oz. spinach, torn into bite size pieces
1/4 c. vegetable oil


Mix vinegar, salt, garlic and pepper; toss with mushrooms and let stand 15 minutes. Toss spinach and oil until leaves glisten. Toss mushroom mixture with spinach.

Makes 4-6 Servings
