Lentil Onion Soup


2 Tbs. olive oil
2 to 3 large onions, sliced
1/2 lb. lentils, rinsed
2 cans beef broth
2 cans beer
8 thin slices French bread, toasted
2 oz. Swiss cheese, thinly sliced


In a large saucepan over medium heat, cook onions in the oil, stirring frequently, 15 minutes, or until beginning to turn brown. Add the lentils, broth and beer. Cover and simmer 20 to 30 minutes, or until the lentils are tender. Top each serving with 2 slices of toast and cheese. Warm to melt cheese.
